Jay’s Darn Good Deer Chili

I know it seems a bit strange to make a chili recipe as Spring just rolled around the corner. However, the snow I saw falling outside early Saturday morning seemed to put me in a rather “chili” {haha!} mood. I’ll fully admit to you, this is not my recipe and furthermore, I am not even a food blogger. Darling hubby is responsible for this carnivorous creation and it is certainly a crowd pleaser. His is made with deer, but you could certainly substitute ground beef for the deer if you aren’t as blessed with a hunter as I am.

Amazing Jay’s Darn Good Deer Chili Recipe

This recipe makes a double batch (we love leftovers). Half for a meal serving 5.

Ingredients:

  • 2 lbs ground deer
  • 2 large cans of whole peeled tomatoes
  • 2 cans of whole kernel corn (drained)
  • 1-2 Tbs olive oil/canola oil
  • 1 medium onion (diced)
  • 1-12 oz can of beer
  • 1 tsp pepper
  • 2 tsp salt
  • 2 tsp cumin
  • 5 Tbs chili powder
  • 1 Tbs garlic or 2 cloves
  • 2 tsp coridander
  • 2-3 bay leaves
  • sour cream (optional)
  • shredded cheese (optional)
  • tortilla chips(optional)
  • Jiffy Corn Bread (optional)

Directions:

  1. In a large stew pot (for double batch) add the olive oil, diced onion, and garlic. Brown until onions are clear.
  2. Add deer meat and brown together.
  3. In a separate bowl, combine the spices: chili powder, cumin, salt, pepper, coriander, and bay leaves.
  4. Add the spice mixture to the browned meat mixture. It will get dry.
  5. Add the can of beer to the pot and stir to combine.
  6. Drain the corn and add both cans to the pot. Stir to combine.
  7. Add the JUICE from the canned tomatoes.
  8. Slice the tomatoes in half as you add them to the pot.
  9. Stir all the ingredients together and bring to boil. Once boiling, turn down and allow to simmer for 1/2 hour.

Serving Suggestions for Amazing Deer Chili:

  • I love mine served over crumbled tortilla chips with a heaping dollop of sour cream and shredded cheese.
  • Darling Hubby like his served over Jiffy cornbread with a more modest amount of sour cream and shredded cheese.
  • Either way, it is guaranteed to please! I hope you enjoy the Amazing Jay’s Darn Good Deer Chili.

    Oooh, this sounds really interesting! I’ve never seen a chili made with deer before! Definitely something I would try. I never worry about what to eat depending on what the weather is doing! If I want something spicy and filling in the heat of summer, I will just do it!!

    Wow! This sounds delish. I just spent an hour and a half in line to vote, it’s cold and rainy, I could use some of this to warm me up from the inside out! I love chili and this is a different recipe, I’ve never thought about adding a can of beer! Pinning this to add to our menu rotation this fall and winter, soup is our go to when it’s cold! BBBRRRR!
